My Family’s all-time favorite dish. This is adapted from a recipe originally created by Jeff Smith.

Saucy, Cheesy,Meaty and Flavorful! This dish will warm your belly and your heart - It is such a terrific comfort food! Serve with a nice Italian red wine.

Ingredients

For the Filling:

  • 2 Tbsp Olive Oil
  • 1/2 Chopped Onion
  • 1 Clove Garlic
  • ½ Lb Ground pork
  • 1 Lb Ground Beef
  • ½ Lb Mortadella Diced small or ground
  • 1 Egg
  • 2 Tbsp Chopped Parsley
  • 2 Tbsp Grated Parmesan Cheese
  • 1 Tbsp Chopped Basil
  • Salt & Pepper to taste

For the Noodles:

  • 5 Eggs
  • 1 ½ Cups Water
  • 1 ½ Cups Flour
  • 1 Pinch Salt
  • Cooking spray

For the White Sauce:

  • 2 Cups Milk
  • ½ Yellow Onion peeled and chunks
  • 2 Bay Leaves one if dried
  • 1/4 Tsp White Pepper
  • 1 Dash Cayenne pepper to taste
  • ½ Stick Butter
  • 3 Tbsp Flour
  • Salt to taste

For the Red Sauce:

  • 1 Jar Good Spaghetti Sauce

Garnish:

  • 12 Oz Grated Mozzarella Cheese

Instructions

Prepare the Filling:

  1. Heat a frying pan or large pot and add the olive oil. Sauté onion until clear, add the pork and garlic and saute for a few minutes more and then add the beef. Cook until all the meat is crumbly. Drain the fat and allow to cool. Then add the remaining ingredients. Mix well and set aside.

Prepare the Noodles:

  1. Put eggs and water in a blender turn it on low slowly and add the flour, and then blend until smooth. Heat a small pan and spray with cooking spray. Add enough batter to the pan (while turning the pan) to make a thin crepe about 5-6" around. Cook on one side until it just becomes dry on top. Remove from the pan and place on waxed paper (separating each one with waxed paper). Make 12 noodles.

Prepare the White Sauce:

  1. Bring the milk to a simmer. Add the yellow onion, bay leaves, white pepper and cayenne. Simmer for a few minutes, then remove the onion and bay leaves. In another small pan melt the butter and stir in the flour (hint: this is called a roux, and can be used to thicken other sauces and gravies). Cook for a moment and then stir it slowly into the hot milk. Stir constantly until it is thick (about 10 minutes). Add salt to taste.

To Finish:

  1. lay out a noodle on waxed paper cooked side up. Place filling in the center and roll it up. Place it seam side down in a baking dish. (you can fit them all snugly in a 9x12 baking dish, but I like to put 2 each into smaller dishes). Top it with the two sauces (just pour one on top of the other). If you have filling left over you can sprinkle this in too. Sprinkle the Mozzarella on top and bake at 375º until the cheese browns and all is hot, about 15-20 mins.
